Centrally placed in the Côte de Beaune, Pommard produces one of the most well known
appellations of all French wines. The village is in the middle of the slopes, in the
centre of its vineyards which are well grouped and at altitudes varying from 240 to 380
metres, facing east or south-east. |
Pommard can only be red. Produced from Pinot Noir, the Village Appellations and
Premier Crus (there are 28 classified locality names) represent annual harvests of :
- 7,500 hectolitres of Pommard Village from 210 hectares.
- 4,500 hectolitres of Premier Crus from 155 ha.

Pommard wines originating from the many different climats retain a typical
character but cannot have uniformity forced upon them : the appreciable nuances of bouquet
and style giving them the quality of being different to all others - like a work of art.
Ruby red wines for ageing, they are trustworthy, ample and well structured, developing
complex aromas.
From an outstanding terroir where everything has come together to produce wines
with power, finesse and a texture of exceptional style. |
| Wines from Pommard need good ageing to reach their potential, it is better to drink
them after 5 to 8 years maturing and even up to 20-25 years. Great vintages will produce
even longer "life expectancy". |

Pommard is best appreciated at a temperature of around 16°-18°C, with uncorking one
or two hours before serving. Young wines can be served at slightly lower temperatures in
order to take some of the bite out of the tannin.
The Burgundy glass (large balloon shape) is obviously the best choice for serving this
wine. |

Culinary work which reaches the level of doing justice to Pommard must be quite highly
seasoned with strong flavours. The following suggestions will give an idea of the type and
level of cuisine necessary : pheasant, wild boar or hare pâté, stuffed shoulder of lamb,
rib steak in wine sauce, potted duck, jugged hare and for the cheeses : Epoisses, Livarot,
Pont-l'Evêque. |
